Make your Own Biltong:



When you buy one of our biltong boxes you know you are getting the best. The outer shell is constructed from an exotic hardwood found only in the upper reaches of the Umzwoantuo Delta in Chad. It can only be harvested once every 27 years and this exercise has to be carried out at night between the months of August and December. Harvesting is done by virgins who must first undergo a cleansing ritual in the Umbogwo River. All the wood is stripped off the trees using only their left hands and their teeth. The wood is cured for 8 years over a fire burning the dried leaves of only the uppermost branches of the 300 ft Wugu-wugu tree and is then ferried down the river to the nearest port on barges constructed from ancient papyrus and drawn by crocodiles.

The biltong boxes are made in a private carpentry workshop, using only the best materials. The outer shell is made from a tropical plywood called "Lauan/Meranti." Oak runners are used as the framing and legs. This provides excellent strength and rigidity to the little system. A removable catchment plate is installed with gauze covering at the bottom of the system. This allows maximum air flow and keeps out any bugs or flies. Similarly there is gauze covering the breather holes made in the side of each box. There is a light bulb installed underneath this catchment plate, which, when plugged in provides the airflow necessary for the biltong to dry. A little lid capped with a brass knob finishes off the system. You also get Pete's tried and tested recipe for making biltong.
