Our boerewors is just like the wors you get back home - great on the braai. We stick to a recipe that won a 'Best Boerewors in South Africa" award back in 1993. The spicing is moderate, with enough coriander, salt and pepper to know they are there, but not so much that it overpowers. It comes to you as 2lbs or 1Lbs coil. The way us South Africans like it, none of these sausage link things.
Boerewors is made from coarsely minced beef (sometimes combined with minced pork, lamb, or both) and spices (usually toasted coriander seed, black pepper, nutmeg, cloves and allspice). Like many other forms of sausage, boerewors contains some fat, and is preserved with salt and vinegar, and packed in sausage casings. Traditional boerewors is usually formed into a continuous spiral, as illustrated on the right.
